Vegan Diaries - Middle Eastern Stew

 The weather here has been a little unpredictable lately.  It is either warm, close to 50 degrees F, or a nice, crisp 20F.    With the weather being so unpredictable, I find that a nice bowl of soup or stew can be very comforting any time.

As dinner rolls around, I am always looking for meal inspiration.  This Middle Eastern Stew is packed with lots of vegetables and some farro thrown in for added protein.  

A few fun facts about farro:    

Farro was a staple crop used in the Middle East.  It was first used in breads.
Farro is a whole grain wheat that is high in fiber and high in protein.
Farro has a nutty flavor.
Farro contains other nutrients like magnesium, iron and B vitamins.
Farro is known as an ancient grain.

With all of the health benefits it makes a wonderful addition to any soup or stew. 

Here's the recipe:





Middle Eastern Stew

ingredients:
2 TBSP olive oil
1 cup carrots, diced
1 cup onion, diced
1 cup chopped celery
5 cloves garlic, minced
5 cups vegetable broth
1 14.5oz can diced tomatoes
1 cup farro
1 tsp oregano
1 bay leaf
4 cups chopped kale
1 14.5oz can cannellini beans
1 TBSP lemon juice

directions:
Heat oil in large Dutch oven over medium high heat.
Add carrots, onion, celery and garlic and sauté for 5 minutes.
Stir in broth, tomatoes, farro, oregano and the bay leaf and bring to boil.
Reduce heat and simmer for 20 minutes. 
Stir in kale and cook for another 15 minutes (or until kale and farro are tender).
Add in cannellini beans and heat through.
Remove bay leaf and stir in the lemon juice.  Feel free to add in additional broth or water to thin out soup.
Serve.

* I like to serve with a little feta cheese.  If you are keeping it vegan, like me, Violife has a wonderful vegan feta cheese.

*If you are unable to find farro, feel free to substitute rice or quinoa in the recipe.

* This pairs nicely with some warm, crusty bread.

My Weird Dog

 Thought it would be a good time for us to check in on my weird dog Pippen.  

Pippen has been experiencing all of the different seasons of weather this last week (you gotta love Chicago weather).  The super cold temperatures had Pippen working on his tan lazing in the sun all day in the living room.  It warmed up a little (in the 50's) and he spent quite a bit of his time protecting his kingdom laying on the back deck.   Of course, the snowfall gave him a chance to run around and play.

Pippen's guard dog duties are never ending.  He is not a fan of diesel trucks (they are quite the threat) making the UPS drivers his number one enemy.  FedEx comes in second place while the mailman gets a pass since he leaves a treat in the box.

The biggest threat to our house usually happens late in the evening.  You see, this evil burglar person always enters our house through the front door.  The audacity of this burglar to have a key to our house in their possession!  It's scary to think that they can let themselves in at any time day or night!  

The other night, as I was getting into bed, Pippen alerted me to the fact that the burglar was breaking in entering our house.  I could tell that the burglar wasn't too happy about the loud barking because she told Pippen to be quiet.  It's good to see that the burglar feels comfortable disciplining our dog.  This burglar is so comfortable in our house, that they proceeded up the stairs into Bella's bedroom.

I guess I forgot to mention that the burglar is Bella.  

Yea, Pippen is doing a great job at protecting our house.  He does go above and beyond his duties by reporting the kids when they come home late at night.

National Random Acts of Kindness - Community Day

 Today is Community Day for our Random Acts of Kindness.  Time to spread our kindness out into the community that we live in.  

Need a few ideas to get you started?

How about Making a Valentine for a local Senior in the community.  Or make several and drop them off at a local Senior Living Facility.  They will love it!

Write a Thank You card to your postal carrier, fire fighter, police officer, etc.

Bring in canned goods to a local food pantry.

Bring clothing, blankets or socks to a homeless shelter.

Donate some items (food, toys, old towels or bed sheets) to a local animal shelter

Pick up trash in your neighborhood

Leave a generous tip

Leave a surprise in a library book

Help a neighbor with yard work

Let someone go ahead of you in line today

Ask a senior what life was like when they were growing up

Feed a strangers parking meter

Bring reusable bags to stores

Tutor someone

Compliment people today

Pay for someone else's lunch/drink

National Random Acts of Kindness Week - Work and School

We have been spreading all of this kindness everywhere this week!  How about showing a little kindness at our place of work or where are children are going to school?   

You spend quite a bit of time at work, why not do something nice for your co-workers?  What about the teachers at your child's school?  A quick little thank you note goes a long way.  Don't forget the office people, nurse and bus driver!  

What can you do today? 

How about: 

Send an encouraging email
Gift an inspirational book
Write a Thank You letter to your teacher
Find out something new about a co-worker (or friend at school)
Be a good listener
Bring a co-worker or friend a coffee
Tutor someone
Compliment people today

National Random Acts of Kindness Week - Neighbor Day

The week continues for our Random Acts of Kindness.  Today we are focusing on our neighbors.  

What can you do for your neighbor today?

Wheel out (or in) your neighbor's trash and recycling bins
Put a surprise (cookies, Candy, flowers or a note) in your neighbor's mailbox
Bring a meal to a neighbor
Bake cookies for a neighbor
Shovel the driveway for one of your elderly neighbors
Visit with one of your elderly neighbors
Pick up a few extra items from the grocery store for an elderly neighbor

National Random Acts of Kindness Week - Thank You Day

 Our National Random Acts of Kindness Week continues with Thank You Note Day!  

This date was probably added in by my mother, the Queen of Thank You Note writing.  I have to say, Mom was right about those Thank You notes.  Everyone loves receiving a thoughtful note or card in the mail.

When was the last time you sent a handwritten Thank You note to someone?  It's probably been awhile, I bet.

Write a note to someone, thanking them for a gift they sent to you...or kind words that they said to you.  Maybe something reminded you of them or you just want to Thank them for being your friend.

Get out your pen and paper and start writing!  Don't worry if you just have plain paper or if you have bad handwriting.  People love to get handwritten notes!  That's the first thing I go for when I bring in the mail!  

Here are some other ideas for today.

Write a handwritten letter
Send an encouraging email
Mail a thoughtful note to a friend/family member/co-worker
Write a positive review of a local business
Thank someone
Compliment people
Give someone flowers
Give someone a valentine card
Write a letter to your mail carrier thanking them

If you don't know the person's address, maybe you can send them a text or email thanking them?  Handwritten is a lot better, but I understand if a text or email would be a lot better for you.

National Random Acts of Kindness Week - Friends and Family

Random Acts of Kindness Week continues with our friends and family!   

Be extra kind to those you love the most today.  Your family.  Bring your parent a cup of coffee, tea or juice,  write a short kindness note to your parents, sibling(s) and spouse.  Offer to do an extra chore today.  Compliment your family members and catch them doing something great.  These tips work great for your friends, too!

National Random Acts of Kindness Week

 This year I thought I would pepper the blog with some fun National Weeks throughout the year. 

This week is National Random Acts of Kindness Week.

This is one week out of the year that is dedicated to performing as many Random Acts of Kindness as possible.

If you haven't made a New Year's Resolution, maybe this is it?  This would be an awesome challenge for your Girl Scout Troop!  I'm sure there is a fun patch that the girls can earn, or they can make their own patch!

Are you up for the challenge?

Well, here we go!

Here are some ideas of kind deeds that you can perform this week.

The Challenges:
Smile at 25 people
Slip a nice note in your friend's backpack (child's lunch or spouse's briefcase/purse)
Compliment 5 people
Pick up 10 pieces of garbage on a walk
Make a new friend
Tell a joke and make someone laugh
Be kind to yourself and eat a healthy snack

Draw a picture and give it to someone

National Secondhand Wardrobe Week

 This year I thought I would pepper the blog with some fun National Weeks throughout the year. 

This week we are celebrating National Secondhand Wardrobe Week.  A week dedicated to scouting local thrift shops for bargains and vintage clothing.  It's time to put those skills to use, search the shops and come home with a new wardrobe!

Need some tips for thrifting:

Not all thrift stores are the same.  You will have to do a little leg work, check out stores and figure out which have the best clothes. 

Some stores sell top quality vintage clothes from another era.

Looking for something current?  Major labels have been known to donate last year's styles or blemished items.  

Best of all, when you thrift your clothes, you are doing good for the environment and giving new life to those clothes.  

How to observe Secondhand Wardrobe Week?

Start the week off by clearing out your current wardrobe.  Gather up the items in your closet that you are not wearing and donate them to a second hand store.  

Make a list of items that you would like to add to your wardrobe.

Scout out the secondhand (thrift) stores in your area.

Frequent the stores, as merchandise is donated daily.

Use #SecondhandWardrobeWeek when posting on social media.

Voice Mail #ell

We have all been there.  You make a phone call to a company and you get into their answering system.  You sit there and listen to the prompts, trying to figure out which one you should choose.  Sometimes you have to listen to the prompts a second or third time, because they don't offer a "Customer Service" prompt.  And if you can't figure out which category your problem/question fits, you just select any number, hoping they will somehow connect you to a live person.  I understand some of these questions can be answered by their system, but, they really need to add in a feature that connects you to a live person.  

I know I have complained  grumbled  bellyached  written about my hatred extreme dislike for companies that use voice mail.  Just type Voice Mail in the search box on the side to visit my other musings on the subject.  

This week I had to contact the cell phone company about dropping a phone line.  When I called in to the company, I found it very difficult to get a live person.  You see, none of the prompts included: "If you want to drop a phone line from your plan."  They have a computer asking me to explain in a few words the reason for my call.  When I say something, the robot says, ok and then you hear a bunch of fake computer typing (there can be an entire blog post dedicated to that fake computer typing.  I mean, why is that keyboard SO LOUD?)  

You will be happy to know that I successfully reached a live person (I think it was only a 30 minute wait time) and was able to cancel that extra line.  They even helped me lower my phone bill.  

As I am typing this, RT is currently in voice mail #e!! on hold with the doctor's office.  This is his second time calling in trying to get a live person.  His first call was forty minutes before he was somehow disconnected.  Right now, he is at 45 minutes and still holding.   I'm not sure how this one is going to turn out.  I do know that prayers are much needed at this time.

Felt Heart Ornaments

 It's almost that time of year!  The National Holiday!  

If you're new here, The National Holiday is how RT refers to Valentine's Day.  You see, I have always been a big Valentine's Day fan.  I love love, hearts and all things red.  I'm not talking the commercial Valentine's stuff, like flowers, card, chocolates and dinner reservations.  Although, I won't turn those down, I mean, who turns down chocolate?  I'm talking the heartfelt love notes and handmade cards.  The romantic gestures like making a special dinner or dessert.  And Valentine's Day has all of that for an ENTIRE DAY!   

I have a little white birch tree in my living room.  Currently, there are red and white disco balls hanging from the tree.  I had some extra felt hanging around, made these cute heart ornaments so I could show the tree a little love.  


The felt heart ornaments are very simple to make, let's get started!

Supplies needed:

Felt (red, pink, white or multi color)
Heart template (or pencil and paper)
yarn 
embroidery thread
needle
pencil
scissors
cotton stuffing

Ready, set, GO!

Use your pencil to trace the heart template onto your piece of felt.  If you do not have a heart template, make one by folding piece of paper in half and drawing half of a heart.  Cut out and you will have the perfect heart.  My hearts are 1.5" x 1.5".  Cut the heart out using the scissors.  You will need two hearts, so, repeat this step.

Cut a piece of yarn approximately 2 inches.  Tie the ends in a knot.  

Once you have your two felt hearts, thread your needle, making sure to tie a knot at one end.  Place one of the hearts on a flat surface with the knotted yarn on top (knot part inside the heart, of course).  Draw the needle through the knot part at the top of the heart. *  Place the other heart on top and proceed to stitch the two hearts together.  You can use any stitch you prefer; I used the running stitch for this project.

A little past the halfway point is when you can start to add your stuffing.  Make sure all of the stuffing stays in the heart and continue your stitching until you make it back to the top and the heart is completely closed.  Tie a knot, draw the needle through the plush and cut thread.  Cut off any extra strands.

*I went through the knot a couple of times to make sure the loop is secure

*I like to use thread that will stand out on the hearts.

Valentine's Day Craft Ideas

 It's February!  A time for love, hearts and all things red!
