Crispy Tofu

 I read a twitter post that said they wanted to start a blog posting recipes.  In the paragraphs before each recipe they would carefully describe in detail how they carried out a murder. 

No plans of murder here.  Sorry.

Although, I could see that happening if they took the last of these tofu bites!  These bites are best served warm.  Toss them in a buddha bowl, with some veggie stir fry, in a salad or eat them alone with some sauce (barbeque or ranch).   They can be refrigerated.  They can be reheated in the oven (or a toaster oven).  You can spice these up by adjusting the seasoning.

Here's the recipe:

Crispy Tofu

ingredients:

14oz tofu, extra firm
1/2 cup vegetable broth
1 TBSP soy sauce
1/2 cup flour
2 eggs or flax eggs*
1 cup bread crumbs*
1.5 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder 
1/2 tsp cayenne

directions:
Oven 400*F.
Slice tofu on long side in five slices.  Press each slice to remove liquid.  Once most of liquid is drained, slice tofu into cubes.
In a bowl, mix broth and soy sauce.  Marinate tofu in mixture for at least 20 minutes (or up to 24 hours).
You will need three bowls.  One with bread crumbs and spices, one with the eggs and the third with flour.
Coat the tofu in flour, then place in egg mixture then into the bread crumbs and place on baking sheet that is lined with parchment paper.
Bake for 15 minutes.  Flip the tofu over and bake for another 15 minutes.  The bites are ready when they are crispy and golden brown.

*to make a flax egg take 1 TBSP ground flax and mix with 3 TBSP cold water.  Let sit for 5-10 minutes before using.
*I use oats as my bread crumbs.  Take 1 cup of oats and put them in the food processor until powdery.
*these would be fun to try with a cajun spice on them
