Winter continues around here this week with some frigid temperatures and the possibility of more snow (Yay!). That means there is plenty of time to get cozy and snuggle up with a big bowl of Lasagna Soup.
Lasagna, although delicious, can be a very time consuming meal to prepare. You have snow to play in, a couch to curl up on and movies to watch. This soup has all of that lasagna yumminess (I'm sure that's a word) and it comes together in about 30 minutes. Who doesn't love quick, easy and delicious?
Here's the recipe:
Lasagna Soup
ingredients:
2 tsp olive oil
7-8 lasagna noodles
1 medium onion, chopped
4 cloves of garlic
1 TBSP tomato paste
1 15.5 oz can diced tomatoes
1/2 cup meatless crumbles
2 TBSP nutritional yeast
4 cups vegetable broth
1/2 tsp pepper
1.5 tsp Italian seasoning
1/2 cup oat milk
1 TBSP lemon juice
1 cup fresh spinach
directions:
Heat oil in large pot on medium heat. Add onion and garlic and sauté for 5 minutes.
Stir in broth, meatless crumbles, tomatoes, tomato paste, pepper and Italian seasoning and bring to boil.
Break lasagna noodles into bite sized pieces and drop in boiling soup.
Cook for 8-10 minutes or until noodles are completely cooked.
Add lemon juice, plant milk, nutritional yeast and spinach and stir.
Remove pot from heat and serve.

*Any plant milk will work. If you are not vegan, you can use regular milk.
*Meatless crumbles are plant-based crumbles that are made to look like meat. They add texture and give the soup the lasagna vibes.
*I add in a splash of wine while making this soup.
